Ingredients
Wet
- 1 c. banana puree (2 bananas)
- 2 eggs
- 1/4 c. honey (85g)
- 1 tsp. vanilla extract
Dry
- 1/2 c. blanched almond flour (65g)
- 1/2 c. oat flour (69g)
- 1/2 c. vanilla protein powder (49g)
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 c. chocolate chips or blueberries (optional)
- 3 tsp. pysillium fiber (optional)
Steps
- Mix all dry ingredients except for chocolate chips
- Mix all wet ingredients in separate bowl. Use a blender or food processor to liquify bananas.
- Mix wet and dry ingredients
- Fold in blueberries or chocolate chips
- Bake at 350F for 18 minutes in 12 cup muffin tray.
Notes
- Can substitute all purpose flour for oat flour
