Ingredients

  • 2.5 c. granulated sugar
  • 1/2 c. water
  • 1/2 c. light corn syrup
  • 2 egg whites, room temperature
  • 1 tsp. vanilla

Steps

  1. Beat egg whites to stiff peaks
  2. Boil sugar, syrup, water to soft ball (250F)
  3. Pour half of the syrup over the stiff beaten egg whites.
  4. Continue beating egg whites. Bring rest of syrup to hard crack (300F)
  5. Slowly pour remaining syrup over egg whites
  6. Add vanilla (and 1 c. nuts)
  7. Dollop out onto parchment paper using 2 spoons sprayed with cooking oil

Notes

  • It is ready when it starts to lose it's glossy sheen
  • If it falls into a puddle it isn't ready
