Ingredients
- 2.5 c. granulated sugar
- 1/2 c. water
- 1/2 c. light corn syrup
- 2 egg whites, room temperature
- 1 tsp. vanilla
Steps
- Beat egg whites to stiff peaks
- Boil sugar, syrup, water to soft ball (250F)
- Pour half of the syrup over the stiff beaten egg whites.
- Continue beating egg whites. Bring rest of syrup to hard crack (300F)
- Slowly pour remaining syrup over egg whites
- Add vanilla (and 1 c. nuts)
- Dollop out onto parchment paper using 2 spoons sprayed with cooking oil
Notes
- It is ready when it starts to lose it's glossy sheen
- If it falls into a puddle it isn't ready
