Ingredients

Peaches

  • 3.5 c. granulated sugar
  • 3 c. water
  • 1 vanilla pod (or 1 tsp vanilla extract)
  • 2 tbsp. lemon juice
  • 8 peaches

Raspberry Sauce

  • 3 c. raspberries
  • 1/4 c. powdered sugar
  • 1 tbsp. lemon juice

Steps

  1. Boil sugar, vanilla, lemon juice, water to dissolve the sugar. Let boil for 5 minutes, then turn down to a fast simmer.
  2. Cut peaches in half and poach peaches in sugar syrup for 2-3 minutes each side.
  3. Remove with a slotted spoon, peel off skin, and let cool
  4. To make the raspberry sauce, liquify the raspberries, sugar, and lemon juice in a blender. Sieve to remove the pits and pour the puree into a jug or squeeze bottle
  5. Assemble: raspberry sauce, sliced peaches, vanilla ice cream, raspberry sauce

Notes

  • Poke peaches with a knife to see if they are soft enough
