Ingredients
- 1 large onion
- 2 large carrots
- 2 celery stalks
- 1 Tbsp. olive oil
- 2 Tbsp. butter
- 3 cloves garlic
- 4 oz. pancetta diced
- 1 lb. ground beef
- 1 lb. ground pork
- 1 c. dry white wine
- 28 oz. San Marzano tomatoes
- 1 c. whole milk
- 1/2 tsp. freshly grated nutmeg
- 1 c. parmesan
- 1/2 c. parsley (garnish)
Steps
- Heat oil and butter. Saute onion, carrots, and celery until it begins to carmelize (about 8 minutes). Add garlic and salt and pepper to taste. Remove
- Brown pancetta. Remove
- Brown beef and pork. Don't stir too often
- Return veggies (soffritto) to pot.
- Deglaze with white wine. Evaporate off the wine.
- Stir in tomatoes, nutmeg, milk.
- Simmer for 3 hours.
