Ingredients

  • 1 large onion
  • 2 large carrots
  • 2 celery stalks
  • 1 Tbsp. olive oil
  • 2 Tbsp. butter
  • 3 cloves garlic
  • 4 oz. pancetta diced
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1 c. dry white wine
  • 28 oz. San Marzano tomatoes
  • 1 c. whole milk
  • 1/2 tsp. freshly grated nutmeg
  • 1 c. parmesan
  • 1/2 c. parsley (garnish)

Steps

  1. Heat oil and butter. Saute onion, carrots, and celery until it begins to carmelize (about 8 minutes). Add garlic and salt and pepper to taste. Remove
  2. Brown pancetta. Remove
  3. Brown beef and pork. Don't stir too often
  4. Return veggies (soffritto) to pot.
  5. Deglaze with white wine. Evaporate off the wine.
  6. Stir in tomatoes, nutmeg, milk.
  7. Simmer for 3 hours.
