Ingredients

  • 3 Tbsp flour
  • 2 Tbsp butter
  • 2 c. milk

Steps

  1. Melt butter over low heat. Blend in the flour and cook slowly until butter and flour froth together for 2 minutes without coloring
  2. Remove from heat. As soon as the mixture stops bubbling pour in the milk (heated to a boil). Beat vigorously
  3. Bring to boil over medium high heat.
  4. Boil for 1 minute
  5. Remove from heat beat in salt, pepper, flavorings

Notes

  • If the sauce is too thick, bring down to a simmer and thin out with milk or stock beaten in 1 Tbsp at a time.
  • If the sauce is too thin, boil it down over moderately high heat OR blend .5 Tbsp butter and .5 Tbsp flour into a paste and beat it in off the heat
