Ingredients

  • 3 egg yolks
  • 1/4 tsp. slat
  • pinch of pepper
  • 1-2 tbsp. fresh lemon juice
  • 1/2 c. unsalted butter

Steps

  1. Place egg yolks, salt, pepper, and 1 Tbsp. of lemon juice in the blender jar.
  2. Melt butter in a saucepan or in the microwave
  3. Blend egg yolk mixture at high speed for 2 seconds.
  4. Uncover. While still at high speed slowly pour in hot melted butter

Notes

  • Prepare immediately before serving. This will only take about 3 minutes
  • Roll lemons to get more juice out of them
  • Average lemon has 2-4 tablespoons of juice
