Ingredients

Wet
- 1 c. milk (254g)
- 2 eggs (107g)
- 1/3 c. melted butter
- 1 tsp. vanilla extract
Dry
- 1 c. whole wheat flour (180g)
- 1/2 c. vanilla protein powder (49g)
- 2 tsp. baking powder (11g)
- 1 tbsp. cinnamon (8g)
- 1/4 tsp. salt (3g)
- 2 tbsp. vital wheat gluten (22g)
- 2 tbsp. pysillium fiber (20g)
- 1/2 c. erythitol
- 2 tbsp. blueberry powder (18g)
- 1/3 c. dried blueberries (50g)
Steps
------------------
1. Mix all dry ingredients. Process blueberries in food processer with half the sugar for better texture and smaller inclusions
2. Mix all wet ingredients in separate bowl.
3. Mix wet and dry ingredients
4. Bake at 350F for 18 minutes in 12 cup muffin tray.
